Four pools include a tiered infinity pool on sheltered Bambou Beach and a 25-metre lap pool (where endemic Mauritian fruit bats swoop to feast on fruit trees at dusk). On the waterfront, Aquapazza, where the Sicilian chef’s signature dishes include linguine ai ricci di mare with local sea urchin, is one of the best contemporary Italian restaurants on the island. Modern French bistro, Beau Champ, offers culinary experiences from a Chef’s table to a wine pairing dinner on Saturdays (with 500-plus wines), as well as a sumptuous breakfast buffet that includes the likes of crêpes and waffles and international fare (à la carte options are also available) on its overwater deck, overlooking a live aquarium.
